I made this Kartoshka cake in Russia, in USA, and now in Germany, so I don’t think it’s the quality of butter. I write stories about food, travel, and things that matter like sustainability and my mild obsession with Hollywood actors. When the only way to get butter or cheese is by obtaining a ration card, one has to get creative. In each some cocoa powder, some crushed pecans or walnuts and some cocoa powder. I LOVE that it’s authentic. From herring under fur coat to pirozhnoe kartoshka, Soviet dishes were born in scarcity. I find they resemble rum balls at that point.The munchkin likes to think so.
Very easy to assemble, your only challenge when making these non-baking treats will be restraining yourself from eating them on your own during the process.
